Anise cookies !

During this weekend I decided to pull out from my oven some nice anise cookies.

The recipes is simple and it only take around 1 hour to make them, ready to eat!

Here it is the recipes for around 40 cookies:

  • 450 gr. of flour (+ around 50 gr. if the mixture is too sticky)
  • 7 gr. of yeast
  • 150 gr. of butter
  • 200 gr. of sugar
  • 3 eggs
  • 2 table spoon of crushed anise seeds
    (or anise in powder, around 3 tea spoons)
  • a pinch of salt
  • optionally : some grated orange or lemon peel

Preparation is quite simple : you dissolve the yeast in a bit of warm water and then mix everything together (yes, everything !) until you obtain a soft mix.

Now you can make two rolls (around 30 cm long each one, large 4-5 cm) and put them in a baking thin with a layer of parchment paper.

Put everything in the oven for around 30 minutes at 180 degrees (I use forced air oven, no grill). Rolls should expand while in the oven and should get a gold color.

Remove them from the oven for around 15/20 minutes and let them cool down.

Cut each roll in slices of around 1 cm and put back in the oven for around 5 minutes (180 degrees) for the top side and 3 minutes for the bottom side.
